I love the cool weather, it’s hard to believe it’s already the holiday season, but I will take the cold weather. I love to cook, and it’s easier to make all the things I enjoy when it’s cold outside. There’s something about warming your house while baking or cooking!
I recently substituted chicken broth, for a carton of Pacific Foods Organic Chicken Simply Stock., which was amazing I might add. Tetra Pak does more than make great products, they keep the environment safe.
I love Chicken Noodle Soup in the fall and winter months! It’s warm, super yummy, and bursting with flavor. If you love chicken noodle soup as much as I do try this recipe. I think you’ll enjoy it as much as we do.
Chicken Noodle Soup Recipe
Ingredients
- 3 cups of cubed or shredded chicken breast, whichever you prefer.
- 2 ½ cups of white egg noodles
- 1 teaspoon vegetable oil
- 12 cups Pacific Foods Organic Chicken Simply Stock
- 1 tsp. poultry seasoning
- 1 cup finely chopped celery
- I small onion finally chopped, about 1 cup
- 4 carrots chopped
- 1/3 cup cornstarch
- ¼ cup water
Directions
- Bring water to a boil in a large pot, and add noodles, and oil. Allow to cook until noodles are finished. Next you will want to drain your noodles, and rinse under cold water. Set aside, until the last step.
- In a large saucepan add the Simpley Stock add the Simply Stock, chicken seasoning, and bring to a boil. Once it reaches a boiling point add celery, onions, and carrots. Reduce to low, and allow to simmer for at least 30 minutes. The longer and lower the better, it gives things a chance to mix and is has more taste.
- In a small bowl or cup, mix together the cornstarch and water. Mix until the cornstarch is totally dissolved in the water, and gradually begin adding it to the soup, stirring constantly.
- Add Noodles & Chicken, and allow to simmer very low for 5 – 7 mins. Don’t cook too long you might over do it with the noodles. Be sure not to cook too long, so you don’t overcook the noodles.
